35 Vegan Recipes for Your Best Easter Brunch Ever

Many years ago, I was at an Easter brunch my friend’s parents hosted and they served lamb. I was not a vegan yet but had been a vegetarian since I was 15. Her father led us in a prayer before the meal and said something to the effect of, “Today, we eat lamb to remind us of Jesus, who was as gentle as a lamb.” He said this without irony and no one seemed to register the weirdness of feasting on the body of Jesus’ proxy (this was a Catholic family, they were fine with the concept of eating and drinking symbols of Christ) or that the celebrated kindness and compassion of Jesus wasn’t extended to the lamb, a being so nonviolent as to be a reminder of Christ. It was weird, but also par for course, if that makes any sense. I stuck to my asparagus.

There are a million reasons to stop eating animals and supporting the industries that profit from their misery (this includes the dairy and egg industries) but what do we do if we want to keep enjoying brunch and the dishes we love? Simple swaps of ingredients from animal origin to plants is the way! Whether using homemade replacements or store-bought, simple or more complicated recipes, it is up to you, but with a little planning and an open mind, you can have a delectable brunch that celebrates the best of Spring — new growth and change, new life, a love and appreciation of the earth — this Easter.
