We’re supposed to “eat the rainbow” for maximum nutritional well-being so why not make it official this June during official Pride Month? I’ve got a collection of juicy plant recipes, from red to purple, and some that include the whole rainbow in one dish. Is it time for an official rainbow party? I think so.

Quick note: While the rainbow as an optical phenomenon is described as having seven colors, the Pride rainbow flag does away with indigo and goes straight to purple/violet, so that is what I’ve gathered here.
